Sinigang na Baboy sa Kamias is a Filipino Pork sinigang version wherein pork belly is cooked in a sour broth using bilimbi, which is locally known in the Philippines as Kamias. This is almost the same as Sinigang sa Sampaloc, but with a different souring agent in which the latter uses unripe tamarind. Gabi or Eddo (also called taro root) is added to thicken the soup. Sinigang is probably one of the most popular soup dishes in the Philippines. Almost any kind of meat can be cooked this way.
